And then you have like 2 dozen leftovers. So we make this cake a lot in place of cupcakes whenever my daughter has a craving (which is often)! She loves that she gets to decorate it, and I love that there is only one 🙂 Also nice? It’s pretty low in calories (about 100 calories for the cake, about 200 if you add store-bought frosting like I do). And, on a side note, it can also be made dairy free if you use Duncan Hines cake mix and Pillsbury frosting! Who’da thunk? You’ll need two simple ingredients to make your mix: 1 box of angel food cake mix and one box of any other flavor cake mix. Simply mix those two together in a big bowl. And then, it’s 3-2-1 time! Mix three tablespoons of your mix with two tablespoons of water, and microwave for one minute. Voila! Cake 🙂 I’ve been making them in little 1-cup pyrex bowls, but you can make them in any small microwave-safe bowl. You need at least a cup’s worth of room to allow for expanding. Add frosting or whipped cream if you want, and then dig in with a spoon and enjoy!
