And I’m celebrating here on Something Swanky with a week dedicated to all my favorite desserts deemed birthday-worthy. Basically, prepare yourselves for a slew of chocolate chip cookies, brownies, and a ridiculous amount of sprinkles. Because I’m obsessed ????????. Kicking things off with this Birthday Chocolate Chip Skillet Cookie was obviously necessary. Everyone knows that chocolate chip cookies are my greatest weakness. And a chocolate chip cookie bigger than my face topped with vanilla ice cream and sprinkles? *swoon* CHECK OUT ALL OF MY VERY FAVORITE RECIPES ON FACEBOOK! If big, gooey chocolate chip cookies baked in a skillet served with a heap of sprinkles aren’t your thing… you may be in the wrong place. A FEW THINGS TO NOTE ABOUT THIS RECIPE: In case you didn’t know… you don’t have to bake this in a skillet! I mean, YES, it is in fact a skillet cookie. And baking it in a cast iron skillet is going to give you a crispier crust, gooier center, and slightly enhance the flavor of the outside of the cookie. BUT it’s not the final word in cake-sized cookies. Feel free to use this same recipe in a 10-inch cake pan, but be prepared to adjust the baking time. I used Wilton Rainbow Chip Crunch sprinkles, because I heart them. But you could also use any multi-colored sprinkles instead. Something I’ve been wanting to try but didn’t do this time around: spread half of the dough in the bottom of the skillet and top with a layer of chocolate chips before spreading the rest of the dough on top of the chocolate chips. Print Ingredients 1 cup butter 1 1/2 cups brown sugar 1 egg + 1 egg yolk 1 egg + 1 egg yolk 1 tbsp vanilla 1 tbsp vanilla 1/4 cup milk 1/4 cup milk 3 cups flour 1 tsp baking soda 1/2 tsp salt 1 cup semi-sweet chocolate chips 1 cup white chocolate chips 1 cup sprinkles Instructions Preheat oven to 350ºF. Melt the butter in a medium saucepan over medium-high heat. Stir in the brown sugar. Remove from heat and let the mixture sit for 5 minutes. Transfer the butter-sugar mixture to a large mixing bowl. Whisk in the egg and the egg yolk. Add the vanilla, milk, flour, baking soda, and salt. Mix just until dough forms. Fold in the chocolate and sprinkles Press the dough into a well greased 10-inch cast iron skillet. Bake for 20-30 minutes until the edges are golden brown and the middle no longer looks doughy. Serve warm, directly from the skillet.
