In the name of all things pumpkin, I am planting my flag and declaring these chocolate covered pumpkin pie bites to be the best darn pumpkin dessert you will ever eat. I am telling you, this is one of my all-time very favorite recipes I’ve ever thrown together. Like ever. Speaking of all time favorites– have you tried this Starbucks Pumpkin Bread recipe yet? I’ve been thinking about it all day. Just sayin. But back to the matter at hand. CHOCOLATE COVERED PUMPKIN PIE! You guys! It’s incredible! Revolutionary! Evolutionary! Other big words! You get me, right? So here’s how this went down: I’ve told you before that my daughter is a pumpkin pie freak. So we actually eat quite a lot of it all year long. And I’ve long since abandoned making a pumpkin pie from scratch every time she picks it as our dessert for family night. Especially when I know that Chris and I won’t be devouring it (because… how much pumpkin pie can a person really eat in a year? Right?). So I’ve taken to buying small pumpkin pies out of the bakery or frozen section. They’re around for more of the year than you’d think! Don’t judge me, but I usually end up tossing about half of it. I just have to. On one of the more recipe pumpkin pie nights at our house, I was putting the lid back on the remaining 7/8 of the pie and trying to think of some fun ways to use the leftovers. Truffles came to mind pretty quickly, since I’ve seen those popping up all over the place for years. I thought I’d use a scooper and just scoop out balls of pie to freeze before dipping. And then it occurred to me… why scoop at all?? Who says these have to be round?! So I froze the remainder of the pie whole, cut it into squares, and dipped it in chocolate. Just like that. Couldn’t have been simpler. Literally the EASIEST dessert I’ve ever made. And not just easy. SO GOOD. Good enough that I’m going to say IT’S SO GOOD at least 15 times in this post. SO GOOD!!! I guess I feel like I need to be crazy emphatic about its deliciousness, because it’s a little hard to believe that a dip in chocolate could really make such a big difference to a little store-bought pumpkin pie. I get it. I was really just looking for an extra recipe to stash in my extra recipes in case I fell short this pumpkin season. Instead I fell in love. Promise me you’ll try this. Seriously. Promise me! We good? Cross my heart, it’s as easy as it sounds. Freeze the pie. Cut the pie. Dip the pie. If you wanna get fancy, add some nuts or some chocolate chips or some of the crumbled crust from the edge pieces on top of the chocolate. Or leave it plain. Still amazing, I promise. T-minus 2 weeks to Turkey Day! Woot! XOXO Continue to Content Chocolate Covered Pumpkin Pie Bites Yield: 2 dozen pieces Chocolate covered pumpkin pie. You'll never go back to normal pie slices again! Print Ingredients 1 ready-made pumpkin pie (homemade or store-bought), any size 12 ounces chocolate melting candy (you may need more or less depending on the size of your pie) Optional: walnuts, chocolate chips, sprinkles, etc for garnishing Instructions Place the pie in the freezer (if not bought frozen) for at least 4 hours or until frozen all the way through. Remove pie from its pan and place on a cutting board. It may be necessary to only work with half of the pie at a time. Cut the pie into strips and then into squares. Place the cut pieces in a bowl or on a tray and put in the freezer. Work with one piece at a time and leave the rest in the freezer as you dip. Melt the chocolate according to the package instructions (I like to melt mine in a mug or deep bowl, 1 minute in the micro with 30-second increments after that). Dip each piece of frozen pie in the melted chocolate and place on a non-stick baking mat or piece of foil or parchment paper to cool and harden (this should happen quickly since the pie is frozen). Top with any optional toppings immediately after dipping. Keep pie bites in the refrigerator until ready to serve.
