A sweet and easy Easter trifle made with pink velvet cake, cheesecake mousse, and Peeps marshmallows. Last week, my daughter made cupcakes for our family night treat. When it’s her turn to make the dessert, I don’t worry too much about making it fancy. Typically we just grab a box mix, store bought frosting, and some sprinkles. It keeps things simple enough for her to do mostly on her own, which is really the point. She used a pink velvet cake mix from Duncan Hines that I’ve been hanging on to for a while. Like… maybe years? ???? So I don’t even know if they sell it anymore. I’m assuming they do. But if not, you could easily make your own pink velvet using this red velvet recipe and swapping out for pink food coloring. And, of course, you could always just add a little pink to any white cake mix batter as well. I’m all for easy! So anyway. Like I was saying, we had a bunch of leftover pink cupcakes last week. And anytime there are cake scraps in the house, I go into trifle mode. It’s easy, it’s pretty, and it always always tastes good. With cream layers of mousse soaking into tender pieces of cake, I can’t say that I’ve ever met a trifle I didn’t like! And this one is no exception. Especially since I snuck a few mini Cadbury eggs into every layer ????. You only need a few simple ingredients to bring this dessert together: ???? a baked pink cake (or any spring-colored cake!) ???? cheesecake pudding mix + milk ???? Cool Whip ???? Peeps bunnies + Easter egg candy I added some pastel sprinkles to the top as well, but that’s totally optional. And by optional I mean completely necessary. ???? Enjoy! Print Ingredients a baked 9x13 pink cake, made from a mix or from scratch 3.4 ounces instant pudding mix, cheesecake flavored 1 3/4 cup skim milk 16 ounces Cool Whip (light or sugar free is fine) Additional 8 ounces Cool Whip for topping 12-pack Peeps Mini Cadbury Eggs Instructions Cut the baked and cooled cake into bite-sized pieces. Layer 1/3 of the pieces in the bottom of a trifle dish. Press a few of the Peeps into the side of the dish on top of the cake pieces. Whisk together the pudding mix and the milk until smooth and beginning to thicken. Fold in the 16 ounces of Cool Whip. Pour about 1/3 of the pudding mixture over the cake pieces. Continue to repeat layers with remaining cake, Peeps, and pudding mixture. Top with Cool Whip, Peeps, and Cadbury Eggs.
