It’s not filled with swirls of cinnamon or Nutella. There’s no glaze. No cream cheese frosting. And there is absolutely, 100% NO WAY that you are going to want to miss this recipe… for white bread. That’s right. Simple, plain jane, ah-freaking-mazing homemade white bread. It’s a classic, a staple in any home. And it comes straight from my mama. My mom bakes the best white bread, soft and tender and better than anything you’ll find at the store. And her strawberry peach jam is out of this world. A fat slice of mom’s bread fresh and warm slathered in her strawberry peach jam is my idea of heaven. And not a chocolate chip in sight, can you believe it? This bread makes really amazing French toast. And it’s perfect for sopping up soup. But my very favorite way to eat it? Mayo, lots of thick tomato slices, heavy on the S&P, and extra bacon ifyouplease. This sandwich actually started out as a bonafide BLT. But one day I forgot the lettuce, and I realized that I could taste the tomatoes SO MUCH BETTER without all that green stuff in the way. So I’ve been eating my homemade BLTs minus the lettuce ever since. I really don’t regret it. With the exception of one little problem… We’ve spent a lot of our summer poolside during lunchtime. And, of course, I’ve been packing my favorite sandwich as often as humanly possible. I quickly discovered that by leaving the lettuce out of the equation, I was losing the major barrier between my sandwich bread and my sopping wet tomatoes! The mayonnaise sort of helps. But not enough. Thank goodness Rubbermaid swooped in and saved the day. Rubbermaid recently sent me their BRILLIANCE Lunch set to test out using our favorite on-the-go summer lunches and healthy snacks. How cute is that little container for dressings? And it’s the perfect spot for my mayo. I also love that it easily separates all the components of my sandwich. Meaning… no more soggy BLTs for me! They stack neatly in our lunch tote (and I love that the bread is protected from getting smashed by my world’s-heaviest-water-bottle I’ve been carting around all summer), and they are LEAK PROOF! Like, 100000000% leak proof. Which is awesome, because sweet dips are my jam in the summertime. And all year, actually ????. This brownie batter dip is pretty much game changer. You should try it ASAP. Another cool thing I discovered about Rubbermaid’s BRILLIANCE Lunch containers? That leak proof feature also slows down the oxidation process on sliced apples because the seal is so tight. They still brown a little bit of course, but significantly less than when I’ve stored them in other containers. How awesome is that?! Just a little bonus I thought worth mentioning, since I cannot be the only one with kids who refuse to eat slightly browned apples. Right?! ???? So, to sum it all up… Please don’t die until you’ve tried my mom’s bread with strawberry peach jam. And then you should eat it with bacon and tomatoes (but no lettuce). Said lettuce is rendered useless anyway, because Rubbermaid is taking care of business. You can now eat your own bowl of brownie batter and not feel bad about it. Use it for sandwiches, french toast, or straight out of the oven smothered in butter! Print Ingredients 2 1/2 cups warm water 2 tbsp instant yeast 1/2 cup honey 5-1/2 cups all-purpose flour 3 tbsp nonfat dry milk 1 tbsp salt Instructions Add the warm water to your mixing bowl. Sprinkle the yeast over top and add the honey. Let rest for 5 minutes until the yeast is foamy. Add the flour, dry milk, and salt. Mix well until dough forms and is just barely pulling away from the sides of the bowl (I use the dough hook on my stand mixer to do this). Cover and let rise until doubled. I place my bowl on a heating pad, and it only takes about 30 minutes. Punch down the dough and divide it for use before second rise. Divide the dough in two and shape each piece into a loaf. Place the dough into greased and lined loaf pans (I like to use a 9x5). Cover and let rise until doubled (again, I place my loaf pans on a heating pad to accelerate the process). Bake at 365ºF for 30 minutes. Brush the tops with butter if desired.
