This recipe is for those of you who are like me and are a bit “challenged” when it comes to making a homemade pie crust. This recipe couldn’t be easier, because there is absolutely no rolling involved! Simply mix and use your hands to press in the pie pan. If you’ve been around here long enough, then you know it’s no secret that homemade pie crust has never been high on my priority list. Don’t get me wrong– I like to eat a good homemade crust as much as the next guy. But making one?? I’d rather poke my eyeballs out. Anyone else? I can usually make the dough okay, that’s not really the problem. But when it comes to rolling… that’s where I get myself into trouble. My crust cracks and splits every. single. time. And it drives me INSANE. So, when given the option, I typically resort to Pillsbury. And I’m fine with that. NBD. Until I’m working on a project that needs a pie crust and there is no way I’m going to the store with my two kids in tow during rush hour traffic/almost dinner time/witching hour. THEN it’s a big deal! Enter: the lazy man’s fool-proof, no rolling required, press-in-the-pan pie crust. So whether you’re in a pinch and just can’t get to the store for a pre-made crust, or whether you’re one of those folks who really does care that your crust is made from scratch… listen up! This recipe is for you 🙂 Easy peasy instructions about to happen. Ready? Into a large mixing bowl goes the flour, salt, and oil. Mix, mix, mix until you have crumbs (like the picture on the left below). Add two tablespoons of cold water, and mix some more until you have bigger, more stuck-together clumps of dough. Like this: Use your hands (or one hand if you happen to also be juggling a camera in your other hand, like I was) to form a disc with the dough . Place the dough disc in a deep dish pie pan. Press the dough out and up the sides of the dish with your fingers. If it cracks a bit, that’s ok. You’ll smooth it out as you go. Voila! You’re ready to go! You can either pre-bake it now if you are making a no-bake pie filling. Or go ahead and fill it and bake according to the pie recipe instructions. I’m always in charge of the chocolate pecan pie at our Thanksgiving, so that’s what I’ll be using my crust for 🙂 Enjoy! Print Ingredients 1 1/3 cups all purpose flour 1/2 tsp salt 1/3 cup vegetable oil 2 tbsp cold water Instructions Mix together the flour, salt, and oil until crumbly. Add the cold water, and mix until big clumps form. Use hands to shape dough into a disc. Place dough in pie dish and press to spread dough evenly in dish and up the sides.
