Buttery, crispy Ritz crackers filled with peanut butter and dipped in chocolate. The only thing better than how they taste is how adorable they look decked out as rudolph and friends!

12 Days of Christmas Cookies

Day 5 of Christmas Cookies. This is an awesome recipe to have in your back pocket for those last minute cookie plates. You can have these made and ready to package in 30 minutes TOPS. No baking involved at all and SUPER cute boot!

I suppose these technically aren’t cookies at all, but… for all intensive purposes, let’s just say that they are. Here’s the breakdown:

Ritz cracker.

Peanut butter.

Another Ritz cracker.

Lots of melted chocolate.

A few antlers and a shiny, red reindeer nose. ????

The combination creates a flavor and texture combination like no other! Sweet, salty, crunchy, and completely addicting.

I dressed these up for Christmas using this sweet little Reindeer kit I found at Target:

But you don’t really HAVE to have it. You could always use broken pretzels as antlers and buy the googly eyes separate (I can usually find those in the baking aisle at Walmart year round, but it’s not a bad idea to stock up after Halloween when you can find them EVERYWHERE). And the noses are just black jelly beans or red M&Ms (for Rudolph. Obviously).

I also made a few goofy looking snowmen using a candy coated sunflower seed (found at Trader Joes in October) as the “carrot” nose and mini chocolate chips for the mouth:

Before you get started on these, here are a few tips:

  • I like to use candy melts, NOT chocolate chips for projects like this one. Ghirardelli melts (Target and Walmart in the baking aisle) or Wilton (Walmart in the cake decorating section) are the brands I use the most. The melt and coat well, harden quickly, and don’t need to be tempered. If you use chocolate chips, you will need to keep your treats refrigerated until ready to eat.
  • A silicone baking mat, like a Silpat, is an ideal surface for allowing chocolate covered treats to cool and harden. Once they’re ready, they peel right off!
  • To fill the crackers with peanut butter, I simply scooped some PB into a plastic baggie and snipped the corner off so I could pipe the peanut butter on to the cracker. This keeps things nice and neat and easy for dipping in the chocolate.

Peanut Butter Ritz Cracker Cookies

Yield: 12

Buttery, crispy Ritz crackers filled with peanut butter and dipped in chocolate. The only thing better than how they taste is how adorable they look decked out as rudolph and friends!

Ingredients

There really are no set measurements for these cookies, so feel free to adjust this recipe as needed

  • 12 ounces melting candy (white, colored, or chocolate)
  • 24 Ritz crackers
  • 3/4 cup creamy peanut butter
  • sprinkles and candies to decorate

Instructions

Melt the melting candy according to package directions.

Pipe peanut butter in between Ritz crackers to make cracker sandwiches.

Dip the cracker sandwiches in the melted chocolate. Use a fork to remove and tap edge of bowl to allow excess chocolate to drip off.

Place on silicone baking mat or parchment paper to cool and harden. Decorate with sprinkles and candy before chocolate has hardened.
