I used my favorite Amish Sugar Cookie recipe for these, but you could even use a roll of store-bought dough. Just know that my recipe makes two 9×13 jelly-roll pans, and a store-bought roll of dough is only enough for one pan. 2. Bake and cut out. Here’s where it gets awesome. Instead of cutting out the dough and praying it holds shape in the oven– just cut out the shapes AFTER the cookies are already baked! You’ll have some scraps left over. Using an electric mixer, beat together the butter, oil, and sugars until light and fluffy. Mix in the eggs and vanilla. Mix in the flour, baking soda, and cream of tartar. Line two 9x13 jelly-roll pans with foil. Lightly spray with nonstick cooking spray. Divide the dough between the two pans and press into an even layer. Bake for 20-25 minutes until the tops are barely golden brown and the center looks set. Let cool completely. Cut into shapes. Frost with buttercream and decorate. Buttercream recipe below. Buttercream In a stand mixer, whisk together the butter and the shortening, scraping down the sides as needed, until smooth and blended. Add 1 cup powdered sugar and 1 tbsp milk, whisk until smooth.
