It’s finally here! Back to school season is in full swing everywhere, including the Swank house!

My oldest starts kindergarten this year, and we are all pretty thrilled about it. I have never, ever seen a child more bored and ready for school to start. Having a baby this summer meant that we didn’t give her much of a summer vacation, and I think she is so over it (although she’s actually been a pretty great sport all things considered). She’s got her first day outfit picked out, her glue sticks and notebooks all packed, and her Disney Princess backpack and lunch box ready to go.

Speaking of lunch boxes and my daughter… we’ve recently discovered that she’s quite the peanut butter snob. No joke. All this time I had been thinking she didn’t like peanut butter, but as it turns out– she’s just picky about what kind of peanut butter I’m buying! ???? #5yearoldprobs

So for today’s recipe in honor of my sweet kindergartener’s newfound (well, more like newly discovered) love for high quality peanut butter, I’m partnering up with Albertsons and Safeway to tell you about O Organics.

These pb&j squares are just like that– pretty simple. All you’ll need is peanut butter, 2 eggs, flour, honey, and a little bit of your favorite jam to spread in the middle. See? Simple!

I almost named these bars “blondies,” but ultimately decided not to, because these bars are actually less in the brownie/blondie category and more in the straight-up-peanut-butter category.

Peanut butter does have it’s own category, right?

I wanted these to be as simple as possible, something I wouldn’t mind packing in my kid’s lunch everyday. And that’s what these are to me. All the fat in this recipe is the healthy kind of fat and packed with protein (something that I have a hard time getting enough of in my daughter!). And I feel good about the other simple ingredients too.

These bars are dense and fudgy, seriously peanut butter-y, with a sweet ribbon of blackberry jam running through the middle. I hope you guys like these as much as we do!

Simple PB&J Bars

Yield: 12

These bars are dense and fudgy, seriously peanut butter-y, with a sweet ribbon of blackberry jam running through the middle.

Ingredients

  • 1 1/4 cup creamy peanut butter
  • 2 eggs
  • 1/2 cup honey
  • 1/2 cup all purpose flour
  • 1 tsp vanilla extract
  • 4 tbsp blackberry jam

Instructions

Preheat oven to 350ºF.

Mix together the peanut butter, eggs, honey, and vanilla.

Mix in the peanut butter.

Spread half of the batter in the bottom of an 8x8 ungreased baking dish.

Spread the jam over the layer of batter (you can be kind of sloppy with this. Jam that doesn't get spread will make yummy "pockets" of jam after the baking is done, so it's ok if it's not evenly spread).

Spread the rest of the batter over the jam layer.

Bake for 20-23 minutes until edges are brown and pulling from the sides of the dish.

Let cool completely before cutting.
