I defy you to stop at just one handful! In full disclosure, this stuff is addicting! Literally, you won’t be able to stop your hand from dipping into this Chex mix and then going to your mouth. Before you know it, there’s the bottom of the bowl! I won’t admit to how I know this… But I have it on good authority. If you’ve been around my blog for very long, you know I love my munchies and snack mixes. I’m kind of a popcorn guru. NBD. I’d die and go to heaven if I could write a cookbook about Chex mix too!! Mmm. I’m addicted to all sorts. I looooooooove classic Muddy Buddies, and so far I’ve made several variations, including: Scotcheroo Muddy Buddies (which are OMG), Lemon White Chocolate, and these yummy Thin Mint Muddy Buddies. Almost as exciting as how these taste is how easy they are to make. To start with, they are totally NO BAKE. Yay! And they come together in just a few simple steps. Here’s the gist: Start with a HUGE bowl. This is a must if you don’t want to make a mess. ???? Then, you’ll melt some butter and pour it over the cereal. Stir a little. Then comes the cinnamon sugar!! Pour a cup of cinnamon sugar all over the cereal, and stir it really well so that every little nook and cranny gets some of that buttery cinnamon goodness. Spread it out on a baking mat or parchment paper and drizzle it all over with white chocolate. Voila! I’m actually sharing this with my friend Megan (who blogs over at Allergy Awesomenes) today and making this recipe dairy free! It’s already gluten free… and all sorts of other stuff-free (isn’t Chex amazing?). Megan’s son has EOE (you can read their story here), which means he has 30+ food allergies! She’s spent hours and hours in the kitchen learning to make all sorts of delicious meals that her entire family can eat, and she’s passionate about sharing allergy-friendly recipes with everyone. Be sure to check out her YouTube page (she’s a natural on camera, I’m so jealous), Instagram, and Facebook for lots of allergy friendly AWESOME recipes– including this Churro Chex Mix! Looking for the recipe?? It’s up on Allergy Awesomeness today sans white chocolate. To make this delectable white chocolate version, toss some Ghirardelli White Chocolate Melts in a baggie and microwave them for about 30-60 seconds. Snip the corner of the bag and drizzle all over the Chex mix. Let cool to harden.
