Except… of course… this is a Wednesday. Sorry about that. With all the hub-bub of the holidays and traveling and being pregnant-sick, the recipe I meant to post last Saturday sort of got lost in the mix. So here we are, mid-week, and I’m making it up to you! You’ll have to (please) forgive my tardiness 🙂 Ok, so just to re-cap the gist of Party Popcorn Saturdays… over the course of 5 weeks, I’m sharing with you 5 of my favorite recipes from my new book, Party Popcorn, AND a special giveaway item that coordinates with each recipe. This recipe is my top most favorite photographed recipe in the book (fabulous photography by Jason Wyche)! I’m seriously in love with it. In fact, it was my personal vote for the cover image. But instead… I had it framed and hung it in my office 🙂 Love it. It also happens to be a family favorite taste-wise. My family even added actual frosted animal crackers to the mix on New Years Eve– which is just twice the fun and twice the yum! Continue to Content Animal Cracker Popcorn Yield: 6 servings This Animal Cracker Popcorn is easy to make and a total crowd pleaser! From the Party Popcorn Cookbook Print Ingredients 8 cups popped popcorn 1 cup pink melting candy 1/4 cup rainbow-colored nonpareils Instructions Pour the popcorn into a large bowl and remove any unpopped kernels. Melt the pink melting candy according to the manufacturer's instructions on the package. Pour the melted candy over the popcorn. Use a large rubber spatula to gently stir to coat. Sprinkle the nonpareils over the popcorn and gently toss to coat. Spread the popcorn on a large piece of parchment paper or a large non-stick silicone baking mat. Allow to cool until the candy coating has hardened, about 20 minutes. Break into pieces before packaging or transferring to a large bowl to serve.

I’m with you on how pretty this looks, Ashton. And I love how it doesn’t actually have any of the animal crackers in it since that’s a US thing. And of course the sprinkles make me happy. By the way, how do you normally pop your corn? A popcorn maker or in the saucepan with oil? A popcorn maker is on my list, but I’m wondering if the oil would interfere with the taste in the meantime.
