What You’ll Need for Black Candy Apples

  • apples
  • sugar
  • corn syrup
  • black food coloring
  • twigs, skewers, craft sticks, or similar
  • non-stick surface (like a silicone baking mat)
  • candy thermometer (don’t be scared– it’s easy!)
  • a medium saucepan with room for the mixture to bubble

Tips & Tricks for Making Black Candy Apples

  • Watch the temperature. Pull the candy off the heat at 300 degrees. DO NOT let it go over 310ºF or you risk burning the candy.
  • Don’t whisk the candy mixture. The sugar already ends up with a lot of air bubbles from the boiling, but you don’t want to add any more by using a whisk. Once you remove it from the heat, use a wooden spoon to stir slowly until the bubbles disappear. I also gently tapped the pot on a pad to pop some of the air bubbles as well. You can still see some on the apples, but I think it’s a fun effect– like a bubbling witches brew! ????
  • You can use red instead of black. It looks great on green apples!
  • I used these Wilton Candy Apple Sticks, and they are awesome!!!! But I’ve also used real branches in the past, and they are super beautiful and artistic.

Black Candy Apples

I make these Black Candy Apples every year for our church Halloween party! I'm always surprised at how "do-able" these stunning apples are to make.

Ingredients

  • 8 medium apples
  • 3 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1 tsp black food coloring
  • 1 cup of water

Instructions

  1. Prepare the apples with sticks, skewers, or twigs and set aside. Prepare a nonstick surface for placing the dipped apples (I recommend a silicone baking mat).
  2. Stir together the sugar, corn syrup, food coloring, and water over medium high heat. Place the candy thermometer in the saucepan, and stir continuously while the mixture bubbles.
  3. If the mixture comes close to bubbling over the edge of the pot, simply remove from the heat until the bubbling goes down and then return to the heat and continue to stir.
  4. Remove from the heat when candy mixture reaches 300ºF.
  5. Dip each apple in the candy and gently shake off excess before placing on the prepared surface. Let cool completely to harden.
