But nothing has been stranger than my cravings…. or lack thereof. Before I got pregnant this time around, I told my husband, “I just can’t wait for pregnancy cravings! Because nothing tastes better than eating a pregnancy craving.” But as this pregnancy has turned out, nothing could be more opposite of the truth. Last time, I’d crave something for about 3 or 4 weeks at a time, and it was the ONLY thing I wanted to eat. I remember, towards the end, practically living on VitaTop chocolate muffins and Vitamin Water (obviously my body was trying to tell me something there….). Anyway. This time around, my cravings have been few and far in between. And they usually last about a day. Because as soon as I try to satisfy them, my taste buds change their mind. Seriously. If I’m craving pizza, I’ll order one. But before it’s even been delivered, I start thinking I’d rather eat something else. And invariably, when we go out to eat, I decide that I’d much rather be eating the food on anyone else’s plate rather than what I ordered. Eating was seriously the part of pregnancy I was looking forward to the most, and it’s so not even fun this time! Such a bummer. What’s not a bummer? This Brownie Mix Banana Bread. Brownie mix has actually been an on-again-off-again craving for me this pregnancy, so I’ve made quite a few brownie mix recipes I’ll be sharing over the next couple of months! But back to the bread… I was so thrilled this recipe worked out! It was totally experimental, but it turned out perfectly on the first try. With just a quick switch-out to my Cake Mix Banana Bread, I had a fudgy and decadent brownie version! And oh em gee — is this banana bread fudgy or what?! It’s fudgy. Really, really, brownie-like fudgy. But banana bread at the same time. Which is, of course, a match made in heaven! I hope you love this as much as we did 🙂 Continue to Content Brownie Mix Banana Bread Yield: 10 slices Fudgy and decadent, this bread is a prefect marriage between brownie and banana bread! Print Ingredients 18.3 ounce brownie mix (just the dry mix, not the other ingredients on the box) 3 eggs 1/3 cup canola or vegetable oil 1 cup mashed bananas (about 3 medium bananas) 1 cup miniature chocolate chips optional: powdered sugar for dusting Instructions Preheat oven to 350ºF. Line a 9x5x3 loaf pan with foil or parchment paper and lightly spray with a non-stick cooking spray. Mix together all ingredients (reserving the chocolate chips) until batter forms. Fold in the chocolate chips. Pour batter into prepared loaf pan. Bake for 50-60 minutes or until a toothpick inserted comes out mostly clean. If you need to bake it beyond 60 minutes, cover it with tin foil to prevent burning the top. Let cool for 10 minutes before removing from loaf pan. Store in airtight container at room temperature for up to one week. Notes You could also bake as muffins. Adjust baking time to 20 minutes.
