 A week dedicated to all the sweet things found in a lunchbox…

Since this week has been all about lunchbox desserts and nostalgic lunch time remembering… I’ve been ruminating over all of my particularly memorable lunch time moments.
I’d say I have about as many embarrassing lunch time memories as I do good ones. Funny how making a fool out of your self seems to go hand-in-hand with all of that unsupervised free time I mentioned before.
It makes sense though. Being strapped down to a desk, only speaking when asked for a scripted answer from your textbook– there are only so many embarrassing things you can do to yourself (although still totally possible, trust me) while in class.
But during lunch time, you’re free from the tyrannical bonds of the classroom.
Meaning: you are totally at liberty to look as absolutely plumb stupid as you can. All on your own. No one with a fully developed brain or appropriate hormone levels will be around to stop you.

What’s your most embarrassing lunch time moment?
When I was a freshman in high school, we ate lunch on the floor. I don’t know why. Don’t ask. We just did. One day I wore a long skirt to school, and, as we did every day, my friends and I were sitting on the floor eating lunch. One of the boys started admiring my skirt– like genuinely, actually admiring some little detail on it…
Anyway. He picked up the hem of it, just like an inch or two, not even a big deal at all. And I, having seen waaaaaay too many self-esteem/how-boys-should-treat-you videos in PE/Heath class, assumed he was trying to see undermy skirt. So I slapped him.Really, reallyhard. Because, when I watched the videos, that’s what I always thought those girls should have done.He was shocked. All of my friends were shocked. My violent, indignant, and quite dramatic outburst created a seriously awkward silence across the quad.

So embarrassing.
I’m still cringing.

Anyway.

If there’s one treat that takes me back to packing my school lunches, it’s Chewy Granola Bars.
My mom’s pantry is still stocked with these.
S’mores was, of course, my favorite variety. Duh.And these are so quick to whip up! They’re no bake, so they’re ready to go in no time at all!Extra perk: they’ll be sure to alleviate any lunch time painful, embarrassing moments your kid has. So don’t forget to pack them up in the lunchboxes!

Chewy Granola 3.1

Chewy S’mores Granola Bars (no bake)

Ingredients

  • 1/4 cup butter
  • 1/4 cup honey
  • 1/3 cup packed brown sugar
  • 2 cups quick cooking oats
  • 1 cup crispy rice cereal
  • 1/2 teaspoon vanilla
  • 1/2 cup mini marshmallows
  • 2 tablespoons mini chocolate chips

Instructions

  1. In a large bowl, stir oats, rice cereal, and mini marshmallows together. Set aside.
  2. In a small pot, melt butter, honey, and brown sugar together over medium high heat until it comes to a boil.
  3. Reduce the heat and cook 3 minutes. Pour in vanilla and stir.
  4. Pour over dry ingredients and mix well to coat.
  5. Pour into an 8x8 baking dish, lined with wax paper and lightly greased. Cover with another sheet of wax paper and press down really well., just like you're making rice krispie treats.
  6. Sprinkle with mini chocolate chips and press down lightly.
  7. Let cool to room temperature for two hours or until the chocolate chips are set before cutting into bars.
