Brookies Recipe Brookies were invented because nobody should have to choose between a cookie and a brownie! My top two favorite desserts are warm brownies and chocolate chip cookies, so I’m a big fan of the brookie. And because there are so many cookie recipes I love, I’ve made a lot of different kinds of brookies over the years. Monster Cookie Brookies. Red velvet Brookies. Peanut Butter Brookies. All good recipes, but my favorite will always be the classic version that I’m sharing in this post. Ingredients for Brookies Recipe The ingredients for this recipe are overwhelmingly simple… you need chocolate chip cookie dough, and you need brownie batter. Both of those can certainly be store-bought versions. When I’m making these for a lazy night at home with the family, I usually use a brownie mix and refrigerated cookie dough. But for the purpose of this post (and for those of you who prefer 100% homemade all the time), here are the two recipes I combine when I make homemade brookies: chocolate chip cookie dough (you only need about 1/2 of the dough from this recipe) brownie batter Directions for Brookies Recipe Brownie Batter Preheat oven to 350ºF. Prepare an 8×8 baking pan by lightly spraying it with nonstick cooking spray and/or lining it with parchment paper. Whisk together the butter and sugar until combined. Mix in the vanilla and the eggs, one at a time. Mix in the baking soda and salt. Add the flour and cocoa powder. Mix until batter forms. Fold in the chocolate chunks. Pour batter into prepared pan. Cookie Dough Combine flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in chocolate chips. Assembly Scoop tablespoons of cookie dough and flatten slightly with your fingers. Layer the dough on top of the brownie batter. You’ll only need about half of the dough, so cover and refrigerate the remaining dough to use for cookies later! Bake for 30-35 minutes. The edges should be starting to pull away from the pan and a toothpick inserted should come out mostly clean. Let cool before cutting.
