I want to start this post off with a little bit of an apology for those of you who are regular visitors to Something Swanky. I know my posting schedule as of late has been a little… erratic. At best. Sorry about that. But I have to blame it on the pregnancy. I’m well into my second trimester, but the fatigue just hasn’t eased up at all. Although, in all fairness, my 4-year old may have a lot to do with that… can’t blame it all on the baby 😉 Most days, the thought of making a dessert, then photographing, then cleaning, then editing photos, then writing a post… just seems like a lot more than I’m willing to take on. So I’ve spent a lot of my time since October sitting on the couch watching Chuck and eating Rice Krispies Treats Cereal. And hoping you guys won’t leave me in the meantime! I’m trying to get back in the groove of things these days, but until then… just don’t go away, mmmkay? And since we’re on the topic, mind if I share some news? I know that frosting is pretty pale and hard to see in my iPhone-quality photo, but it is most definitely BLUE… we’re having a BOY! Although we did it inadvertently, Chris and I both dressed for the day according to the gender we were hoping for. As you can see, I was kind of rooting for a girl. I can’t help it. I love glitter and pink and tutus. I love talking about unicorns and rainbows with my daughter, and I love all things Disney princess. I’m trying to slowly wrap my brain around things that are blue and have trucks printed on them, but in the meantime… I’ll take all the pink sparkly things I can get my hands on! This Cookies & Cream Bark may not sparkle (unless sprinkles count?), but I’ve made it as pink as I possibly can. I absolutely ADORE this stuff. I love the Cookies & Cream Hershey’s Bar, and this bark tastes just like it! Only better– because this bark also has M&Ms and sprinkles. If you wanted to dress it up even more for Valentine’s Day, I think conversation hearts would be super cute too! Bark is like the ultimate treat for sharing. It packages well, looks cute, and always, always tastes good. Plus, you can customize it to fit your (or your friends’) taste! Enjoy! Continue to Content Cookies & Cream Bark Yield: serves 4-6 This bark is chock full of Oreo cookies, M&Ms, and sprinkles! Customize to fit your preferences or an upcoming holiday in a jif by subbing in your favorite candies and sprinkles. Print Ingredients 12 oz. Ghirardelli White Candy Melting Wafers 5 Oreo cookies, crushed (with big pieces) 1/2 cup M&Ms 1/2 cup sprinkles Instructions Melt the white candy according to the directions on the package. Gently fold in the Oreos (I didn't mix these in very well-- just a quick turn with the spatula. I didn't want my white candy to look gray...). Pour the mixture onto a large piece of parchment paper and gently spread as flat as you can. Sprinkle on the M&Ms and sprinkles over the candy before it has cooled and hardened. Allow 20-30 minutes for candy to cool and harden before cutting into pieces to package or serve.

Yay, congrats!  I remember I was looting for a girl and became very sad when I learned it was a boy, lol. But he was the one of the best things happened in my life!! Those barks look excellent for Valentine’s day, pretty in pink. Reply

CONGRTULATIONS!!!  After 2 sons then 3 grandsons I was sure hoping for a great granddaughter. We did get one 3 years ago and we got another little girl in Dec. I LOVE buying PINK and that is all I do buy. After all, it is my money and I LOVE PINK. I can’t hardly buy a boy baby gift. So hard for me. Reply

Congrats!!!! Â I totally hear you on the not posting very regularly. Â During my last pregnancy I didn’t post for like a lot of months!! Â I just couldn’t do it between the fatigue and vomiting and trying to take care of everyone else so I say good job for posting as much as you do!!!
