Today, we’re revisiting one of my oldest recipes. And one of my very favorites. Because (aside from my favorite chocolate cake) I’ve yet to meet another chocolate cake that rivals this chocolate zucchini cake in terms of flavor, texture, and moistness. Plus, we’re talking about FOUR layers of chocolate goodness here:

And the best part is: you’re totally getting in your veggies! Not that you’ll even notice.

You won’t believe there are TWO WHOLE zucchinis in there! And you know what they say– you need 5 servings of fruits and vegetables a day. So, basically, that means you need 2 and a half cakes per day. Which seems reasonable. Amiright? ????

That ganache is practically a superfood on it’s own.

I mean, just look at that! Does anyone else get all ???? ???? ???? watching ganache drip down the side of a cake? Be still my heart!

Ganache is so simple to make. I actually wrote a whole post about it here (which I plan to update soon, in fact. But it’ll do for now). It just takes two simple ingredients: chocolate and heavy cream. I usually nuke it in the microwave in 30 second increments until everything is warm and melty and stirs smooth. But it’s probably a little safer to make it over medium heat on the stove top if you don’t work with chocolate much, just to avoid burning or seizing it.

Death by Chocolate Zucchini Cake

Yield: 12-16

Rich and moist chocolate zucchini cake with chocolate chips and a decadent chocolate ganache on top!

Ingredients

  • 3/4 cup oil
  • 1/4 cup butter, melted
  • 1-3/4 cups granulated sugar
  • 1 teaspoon vanilla
  • 2 large eggs
  • 1/2 cup sour cream or yogurt
  • 2-1/2 cups flour
  • 3/4 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups shredded zucchini (I used 2 medium zucchinis)
  • 1/2 cup chocolate chips

For the Ganache

  • 2 cups chocolate chips
  • 3/4 cup heavy cream

Instructions

  1. Preheat oven to 325ºF.
  2. Whisk together the oil, butter, sugar, and vanilla. Whisk in the eggs one at a time.
  3. Mix in the sour cream.
  4. In a separate bowl, mix the flour, cocoa powder, baking soda, baking powder, and salt. Fold the dry ingredients into the wet until thick batter forms.
  5. Fold in the chocolate chips and shredded zucchini.
  6. Generously grease a bundt pan. Spread the batter in the pan and bake for 55-60 minutes, until a toothpick inserted comes out clean.
  7. Allow to cool in the pan for about 20-30 minutes. Gently tap the sides of the pan to release the cake, and then invert the cake onto the serving plate.
  8. Make the ganache: over medium heat, stir the chocolate chips and heavy whipping cream until the chocolate is melted. I like to switch to a whisk at the end to break up any remaining lumps of unmelted chocolate.
  9. Drizzle the ganache over the cake. Sprinkle additional chocolate chips over the ganache if desired.

  2. Ashton, this is absolutely delicious and beautiful (it rose so high that I thought it was going to bake over the rim of my bundt pan)! Thank you so much for a wonderfully decadent dessert. We didn’t have any zucchini, but we did have four very-ripe bananas, so I substituted the bananas for zucchini. You can definitely taste the banana, it’s not nearly as strong as banana bread, but you can definitely taste it. We also used Greek yogurt, in place of plain yogurt or sour cream (that’s what was in our fridge). Instead of all white flour, we used 1 1/2 cups of whole wheat pastry flour and 1 cup unbleached white flour. I melted the chips into hot butter (if I didn’t my 3 1/2 year old daughter would have picked around the cake to just eat the chocolate chips- kids! :). This was so good that we made this for my birthday cake! Thank you again Ashton for an incredibly chocolatey chocolate cake. — We never got around to the chocolate ganache, and it was still FANTASTIC. Thank you Ashton, thank you.

  5. I am baking this right now!! I can smell the chocolate in the air. I have had zucchini overflowing from the garden the past few weeks, so I’ve been a baking machine. I have to admit I’m not only trying this recipe because it looks DELISH, but I also want to trick my husband. He doesn’t think he likes zucchini. I’m hoping this recipe will change his mind!

  6. Best chocolate cake I’ve ever made! Love that it has some goodies in it! I usually love the frosting best, but I only made a thin ganache and it was fine since the cake was SO moist!
