I know these aren’t anything original, but they are just such a delicious classic!! I couldn’t resist making a batch and posting them this year.

These Easter egg nests (or ‘Haystacks’ if you’re eating them at any other time of year) always remind me of a very special teacher I had in high school. I had this particular teacher for all four years of high school, because she taught my early-morning seminary class (a scripture study class) before school. We call her “Sister T.”

Sister T. is sweet and remarkable. She managed to lovingly teach our class of unruly teenagers for an hour each day starting at 6:45am for the duration of my high school career. And even though we passed notes under the tables (not very subtly, I might add), whispered when we thought she wouldn’t notice, and (more often than not) offered a poor contribution to class discussions… she still gave us hugs and made us treats.

Everyone had a birthday cake from her on their birthday or half-birthday, and they were always warm with melt-y frosting. She would wake up early to bake them before we came to class! And on Christmas and Easter she would make us special holiday treats. Like these Easter eggs nests– which will forever remind me of Sister T!

Easter Egg Haystacks

Yield: approximately 1 dozen

Ingredients

  • 12 ounce bag of butterscotch chips
  • 5 ounce canister Chow Mein noodles
  • miniature candy eggs

Instructions

  1. Melt the butterscotch chips over low heat (or in the microwave in 30-second increments, stirring in between). Stir constantly until melted and smooth.
  2. Mix together the chow mein noodles and the melted butterscotch.
  3. Scoop out the mixture into mounds on parchment or wax paper. Top with 3 candy eggs.
  4. Let cool to harden before removing from the liner.
