We had our first glimpse of a really beautiful, sunny, spring time day while we were visiting my parents in NC this weekend, and I just can’t wait! Funny thing is, I sometimes have problems creating really great spring-time treat recipes. I’m such a fall and winter dessert maker; I do really well with chocolate, peppermint, caramel, peanut butter, pumpkin, and all of those other deep, dark, rich flavors. Light and spring-like is typically a bit of a challenge for me. Which is why I am so in love with Duncan Hines Frosting Creations! Their limited time spring line-up of flavors is absolutely incredible! And so easy to incorporate into lots of really fun and creative recipes! Of course, the simplest way to use Duncan Hines Frosting Creations is to make… well, frosting! Simply open a pack and pour it into the Frosting Creations Frosting Starter! But let’s say you want to venture outside the box a bit… like, maybe make some ice cream with your flavor packets? I’ve seen lots of recipes floating around out there using these flavor packets, but I can personally vouch for the ice cream. It. is. stupendous! Just like the last time I made ice cream, I was out of graham crackers (because we all like a little crust in our ice cream, right?). So, like last time, I substituted Golden Oreos, and I can’t say I regret it. It was a fabulous pairing, and I’m doubting the necessity of an actual graham cracker crust for anything else ever again! And let’s say you’re looking to venture out of the box even more… how about Key Lime Pie Push Pops?? These are so easy to make! Simply spoon or pipe the ice cream batter into the holders and freeze! I set mine on the wire rack in the freezer so they didn’t have to lay sideways. It worked perfectly! This is also a great way to portion out that ice cream into single servings (otherwise, you’ll eat the entire batch, trust me). Print Ingredients 2 - 8 oz Cool Whip 1 - 14 oz can Sweetened Condensed Milk 1 Duncan Hines Key Lime Pie Flavor Packet 15 Golden Oreos, finely crushed 1/4 cup chopped pecans pinch of cinnamon pinch of salt Instructions In a large bowl, whisk together the cool whip, sweetened condensed milk, flavor packet, cinnamon, and salt. Use a large rubber spatula to fold in the golden oreos, only stirring 2-3 rotations. Scrape the batter into a loaf pan. Sprinkle the pecans on top. Cover and let freeze for 4-6 hours at least.

What is the quantity that the cookies equate to in order to swap out for crushed graham crackers (1 cup, 1 and a 1/2 cups, etc…how much)? I don’t want to buy cookies and crush them up just to find out. If I make this I’m going to use whipped heavy cream that I lightly sweetened with powdered sugar. I’m not a fan of cool whip, powdered coffee creamers or liquid coffee creamers (I’m not a big health fanatic but know these are bad for the body). I’d like to read a review from someone who actually tried this recipe instead of all the comments about how yummy it sounds. Anyone?? lol Reply
