Ganache Brownies

Happy Valentine’s Day Something Swanky readers! It’s me Emily from It Bakes Me Happy and today I baked you some seriously delicious Ganache Brownies. Because honestly, what’s better at Valentine’s Day than chocolate? Double chocolate!

Ganache Brownies

I’m a hopeless chocolate addict, I love it in every form, but brownies happen to be my all time favorite dessert, especially fudge brownies.

Top that with a layer of smooth, creamy ganache and I’m in heaven, seriously! I could eat these every day for the rest of my life with zero regret, but my hips probably wouldn’t like me for it.

These ganache topped brownies are a super rich, decadent treat that makes the perfect ending to that special dinner you have planned. Bake up a batch of these irresistible brownies for a friend or your sweetie and snag one (or two) for yourself, because trust me you don’t want to miss out on them.

Ganache Brownies

While I definitely prefer chocolate on Valentine’s Day, you can toss on a few festive sprinkles to cater the look of these to almost any occasion. I hope that you have a great Valentine’s Day, enjoy and happy baking!

Ganache Brownies

Yield: 12 brownies
Prep Time: 10 minutes
Cook Time: 25 minutes
Additional Time: 25 minutes
Total Time: 1 hour

Ingredients

For the brownies:

  • 8 Tbs butter
  • 1 c sugar
  • 1/2 c chocolate chips
  • 1/2 c cocoa powder
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 1 egg
  • 1/2 c all purpose flour

For the ganache:

  • 1 c good quality dark chocolate chips
  • 1/2 c heavy whipping cream

Instructions

Preheat your oven to 325º F and line an 8"x8" baking pan with aluminum foil, prepare with cooking spray and set aside. In a microwave safe bowl melt the butter. Stir in the sugar and chocolate chips. Return the mixture to the microwave for an additional 15-30 seconds to melt the chocolate completely, stir until smooth. Add the cocoa powder, vanilla and salt; beat in the egg. Add the flour and stir until the batter just comes together. Spread the batter evenly in the pan and bake for 23-25 minutes until a tester comes out mostly clean. In a microwave safe bowl heat the heavy cream for 1 minute, stirring after the first 30 seconds. Stir in the chocolate and whisk until smooth. Spread the ganache over the brownies and add the sprinkles. Refrigerate for 1 hour, slice, let sit at room temperature for 10 minutes and serve. Store remaining brownies in an airtight container in the refrigerator for up to 5 days.

  1. These are so good!  I made them yesterday and put St. Patricks Day sprinkles on them and they were the cutest little brownie bites ever!  I did use the stovetop instead of the microwave to melt it all.  One thing about these is if after 25 minutes the toothpick doesn’t come out clean, take them out of the oven anyway!  I left mine in the oven for a little too long, but they still turned great and my family loved them.
