But, you know… now that it’s sort of built up, it’s probably going to be super anti-climatic. Don’t you hate that? On occasion, like once a month (yes….), I’m super CRAZY emotional. My husband should seriously be sainted for the mood swings he’s lived through. And sometimes I don’t even feel the emotional outbursts coming on– they just appear on their own, completely out of nowhere. Like this past Sunday night… My husband and I were watching The West Wing. It’s on Netflix now, and neither of us watched it back when it was actually on the air. Plus, helllooo most awesome B-list cast ever! I mean, like half the peeps from Parks and Rec were on The West Wing! Who knew?? Anyway. We were only into about the 3rd episode when (spoiler alert if there’s actually anyone else out there who’s never watched the show) when Leo’s wife leaves him. And, seriously. We’re not even really that attached to these characters yet. I mean, we just barely started watching it! Regardless, all of a sudden, I’m just weeping! And I mean, like REALLY weeping. I tried to hide it, especially because I was still crying about it a minute or two after the scene (and in TV time, that’s like a day later). But, of course, there’s no way to actually hide ridiculous, impromptu sobs. So my husband’s staring at me, and he thinks it’s adorable and tries to kiss me. Which was only the most annoying thing in the world he could have done. So then I’m yelling, “STOP TREATING ME LIKE YOU THINK I’M CUTE!!!!” At which point, the entire situation just completely deteriorated, and I was on the floor laughing. So that’s my funny story. It was pretty funny after the fact 😉 . These cookies were SO amazing. I adapted the recipe for these from a Sour Cream Chocolate Chip Cookie recipe from Pint Sized Baker, and sour cream cookies are known for being extra fluffy and chewy. The Irish cream I used instead of the sour cream had the exact same effect, and added little extra added richness in flavor. Oh, and they’re chock-full of three kinds of chocolate chips! Move over green-dyed Shamrock cookies! There’s a new Irish cookie in town 🙂 Continue to Content Irish Cream Triple Chocolate Chunk Cookies Print Ingredients 3/4 cup granulated sugar 3/4 cup brown sugar 1/2 C Irish Cream creamer 1/4 C Butter 1/4 C Shortening 1 tsp Vanilla extract 1 Egg 2 1/4 C All-Purpose Flour 1/2 tsp Baking Soda 1/4 tsp Salt 2 C Milk chocolate chips (I used Hershey's Baking Melts) 1/2 cup white chocolate chips 1/2 cup semi-sweet chocolate chunks Instructions In the bowl of a stand mixer, beat together the butter and shortening. Add the sugars and beat until creamy. Add the egg, creamer, and vanilla and mix well. Mix in the flour, baking soda, and salt, just until a dough forms. Pour the chocolate chips into the bowl and use a wooden spoon or sturdy spatula to mix them in. Scoop by 1/4 cup (about the size of an ice cream scoop) onto a silicon or parchment lined cookie sheet (6 to a cookie sheet). Bake at 350 for 15 minutes (baking time may vary 2-3 minutes). Chocolate and Bailey’s is a perfect combination! I’ve been known to cry at commercials too, which I clearly hide from whoever’s in the room because if they start making fun of me I start crying all over again because they’re making fun of me! Uh, hormones suck! Reply
First of all, I can’t wait to make these! I am excited to see that you used Hersey’s baking melts, because I picked some up last month but I wasn’t sure if I should just replace a chocolate chip. The baking melts are larger which means more chocolate! Second of all, I am a crier, everything makes me cry, happy or sad. So I never watched Grey’s Anatomy when it was on TV and now I watch it on Hulu Plus all the time. I have to shut the door and warn my boyfriend that I am watching it, since it is pretty much a guarantee that I will cry at EVERY episode. Reply

I cry at commercials, songs, kids art work, you name it. At least your husband tried to reach out to you, mine just ignores me! I love Irish Cream, Ashton, not sure there is anything better than this cookie. I am so sad I don’t have one in my hands right now-I could cry over that too! The Irish cream you used – is this like Bailey’s Irish Cream or something for coffee? These sound wonderful and I’m eager to make them but I think I need to know about the Irish cream first. I really miss The West Wing! It was a smart show and showed that government really tries to do the best job it can for us. Reply
