Party Popcorn, by Ashton Swank

I am so excited to finally debut this 5-part weekly series that I’m calling Party Popcorn Saturdays. I’ve been plotting this for weeks and weeks and just dying to share it with you guys!

Some of you may already know, but my cookbook Party Popcorn was just released this week!! So, to celebrate the release of the book and to say a big THANK YOU to all of you, my amazing readership, I’ve lined up 5 weeks of sharing some of my favorite recipes from the book with a coordinating giveaway at the end of the series.

Each week I’ll share a new recipe and a new giveaway item that I will be giving away at the series finale on January 13! 5 delicious popcorn recipes, 5 super-sweet prizes, and 5 signed copies of Party Popcorn. Are you ready to get started?!

This is one of my very favorite photos from the book (photography credit to the super talented Jason Wyche). I love the gift box styling, and (of course) the bright, beautiful pink against the brown and white. Gorgeous!

And absolutely easy and delicious too! Chocolate-covered popcorn is one of my favorite go-to recipes for gifting and entertaining. It’s cheap, easy, tastes good, and packages well. Plus, you can dress it up with sprinkles and colors making it extra fancy as needed ๐Ÿ™‚

Neapolitan is such a classic trio of dessert flavors, I simply couldn’t leave them out!

Party Popcorn Giveaway

This recipe’s coordinating giveaway item is this uber-girly, pink and ruffly (complete with bows) Strawberry Shortcake Apron!

Enjoy the recipe today, and then come back on January 13 to enter to win this sweet apron plus 4 other awesome prizes, including a signed copy of Party Popcorn for each winner. And if you just can’t wait to enter the giveaway to check out the book, I understand. You can purchase Party Popcorn on Amazon, IndieBound, and at Barnes & Noble.

And don’t forget to watch for the next Party Popcorn Saturday post next week!

Neapolitan Popcorn

White chocolate, milk chocolate, and strawberry coated popcorn make up a delicious and beautiful dessert trio perfect for gifting and entertaining!

Ingredients

  • 9 cups popped popcorn (about 1/3 cup kernels or 3 microwave bags)
  • 1 cup white chocolate or vanilla melting candy
  • 1 tbsp strawberry-flavored instant gelatin mix
  • 1/2 cup milk chocolate melting candy

Instructions

Divide the popcorn evenly into three large bowls and remove any unpopped kernels.

Place 1/2 cup of the white melting candy in a medium microwave safe bowl. Microwave on medium power for 30 seconds. Stir until melted and smooth. If needed add additional heating time in 30-second increments, stirring after each time until the candy is melted and smooth. Whisk the strawberry-flavored gelatin mix into the melting candy.

Pour the melted candy over one bowl of popcorn. Using a large spatula, gently stir to coat.

Spread the popcorn mixture on a large piece of parchment paper or a large silicone baking mat. Allow to cool until the candy coating has hardened, about 20 minutes.

While the first batch of popcorn is cooling, place the remaining 1/2 cup white melting candy in a medium microwave-safe bowl. Microwave on medium power for 30 seconds. Stir until melted and smooth. If needed add additional heating time in 30-second increments, stirring after each time until the candy is melted and smooth.

Pour the melted candy over one bowl of popcorn. Using a large spatula, gently stir to coat.

Spread the popcorn mixture on a large piece of parchment paper or a large silicone baking mat. Allow to cool until the candy coating has hardened, about 20 minutes.

While the first two batches of popcorn are cooling, place the milk chocolate melting candy in a medium microwave-safe bowl.

Once all batches of popcorn are cooled enough that the candy coats are set, mix them together in one bowl and serve immediately. The popcorn may stored in an airtight container for up to 4 days.

  2. Hi Ashton-wanted to let you know I bought your wonderful book for myself for an early birthday present…..oh my GOSH-I have just about every page dog-eared! It’s one AMAZING book! And this popcorn is one amazing popcorn too. I made it to bring to our daughter’s house and my grandsons (and daughter & son in law) LOVED it…..so did my husband and I. I also made the sea salted caramel corn—my daughter swooned since salted caramel is one of her favorite things ever.

Thanks so much for writing this book and sharing all your wonderful recipes-I can’t wait to try more of them.

    Happy New Year! ๐Ÿ™‚
