Ingredients

  • 1.5 kg (3.3 lbs) chicken, cut into pieces
  • 4 tablespoons Jamaican curry powder
  • 1 teaspoon ground allspice
  • 1 teaspoon dried thyme
  • 4 cloves of garlic, minced
  • 1 large onion, chopped
  • 2 scotch bonnet peppers, seeded and chopped
  • 3 green onions, chopped
  • Juice of 1 lime
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 3 cups of chicken broth
  • 2 potatoes, peeled and cut into large chunks
  • 2 carrots, peeled and cut into large chunks

Instructions

  1. In a large bowl, combine 2 tablespoons of curry powder, allspice, thyme, garlic, onion, scotch bonnet peppers, green onions, lime juice, salt, and pepper. Add the chicken pieces to the bowl and mix well until they are coated evenly with the spice mixture. Cover the bowl and let it marinate in the refrigerator for at least 2 hours, or overnight if possible.
  2. Heat the vegetable oil in a large pot over medium heat. Add the remaining 2 tablespoons of curry powder to the pot and cook it for a couple of minutes until it becomes fragrant.
  3. Add the marinated chicken pieces to the pot. Brown them on all sides for about 10 minutes.
  4. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for about 30 minutes.
