And it’s here. On Something Swanky. Where weight gain is a happy thought. I’ve been exploring the world of lightened up desserts in HG’s 200 Under 200 cookbook– which is awesome, by the way. You don’t have to eat these frozen– they’re great fresh. But I thought the marshmallow and cool whip topping was even better and creamier frozen! But hey– that’s just me! It’s up to you how you want to eat these guys π {Skinny} Frozen Hot Chocolate Cupcakes Recipe adapted from: Hungry Girl 200 Under 200 6026330 Ingredients For the Cupcakes: 2 c. Pillsbury Sugar-free Chocolate Cake Mix 1 Swiss Miss Diet Hot Chocolate Mix Packet (25 calorie) 1/2 c. egg whites 1 tbsp. sugar substitute (splenda, truvia, etc) 1/8 tsp salt. 1 1/4 c. water For the Frosting: 1 c. Marshmallow Fluff 1 c. Cool Whip lite or free Instructions For the Cupcakes: Whisk together the the cupcake ingredients until smooth. Distribute batter evenly into 2 standard size cupcake tins (24 cupcakes). Bake at 350ΒΊ for 15 minutes. For the Frosting: Using a hand mixer, blend the cool whip and the marshmallow fluff until smooth. Spread over the cupcakes. Eat right away or freeze overnight! In the process of trying to loose weight and train for a 5k, but I love deserts and even though you post some delicious desert recipes I have been trying to stay away from them (for now) but this one, oh no!! The frozen cupcake idea is really creative and I bet it makes them last a little longer because you can’t just throw the whole thing in your mouth at once. Or at least I can’t…cold headache! YUM! Reply
