I feel like I’m constantly goal-making, so…. why bother making a big thing of it once a year? Every Monday is New Years over here! We do make family goals though– three. We try to make one goal financial, one spiritual, and one that’s fun (like go on a family vacation). 2012 was a big, fat Swank family FAIL on all three counts. So our goals this year were easy to make… we’re just trying again for all the same goals in 2013 ๐ Wish us luck… apparently these aren’t easy feats for us! Weight loss is, of course a DAILY struggle for me. I had really wanted to lose about 15 lbs before Blog Conference season. And instead, I gained 5! So here I am, with about 20 lbs to lose, and less than 6 weeks till my first Conference. Not ideal… While I’m certainly no master, obviously, of the weight loss game, there is one trick that I’ve found to be really helpful: smoothies. I shared with you my stand by smoothie recipe last summer. It’s simply Crystal Light and frozen fruit blended together into one perfectly sweet smoothie. I know there’s a lot more you can do with smoothies beyond my little ol’ recipe. But I really love it because it’s SUPER easy to blend, affordable, easy to change up, and takes care of a serving of water and two serving of fruit. Plus you can always add to it if you need a little extra protein or iron or whatever. This smoothie is the more decadent cousin to that recipe. I used almond milk instead of Crystal Light and a little bit of cheesecake pudding mix, and the whole thing comes in at 1 WW points+ (gotta love that free fruit)! Continue to Content Skinny Strawberry Cheesecake Smoothie Print Ingredients 1 1/4 cups frozen strawberries 1 cup unsweetened vanilla almond milk 1 tbsp sugar free fat free instant cheesecake pudding mix 1 tsp truvia (or other no calorie sweetener) Instructions Place all ingredients into a blender. Pulse until smooth and serve. Makes 1 serving. Notes about this recipe: I always blend my smoothies in a mason jar for minimal dirty dishes! For a visual on how to do this, check out my Easy Skinny Smoothie post from the summer. The almond milk measurement is somewhat approximate. Add a little more for a thinner smoothie, a little less for a thicker smoothie. I like to make the milk just level with the strawberries– I eyeball it rather than measure. Add a big fat dollop of whipped cream (fat free of course!) and some crumbled graham crackers for the full “cheesecake effect.” Not included in my WW points calculation. You can skip the additional sweetener if you want– it wouldn’t be a deal breaker. But I do think it makes it taste a little more dessert like. You are gorgeous and seriously 20lbs? No way!!!Besides, then you’d be all “no I can’t eat that” at conference, and then we can’t kiss all over Karly’s nutella brownie face cause you’d be totally worried about calories! Okay….on to the topic at hand. This smoothie looks insanely delicious!!! I’m going through a horrible epic fail at blenders. In the past year I have bought (and wasted money) on two. I think I need to just buy a good one (or be gifted one by a fabulous company), ahaha!!! Reply

This looks amazing! And since I have all the ingredients needed in my possession, this is happening today! On a separate note, I have just started food blogging and would love to learn more about it! How do I find out about these blogging conferences? I would love to attend but I am really not sure where to start. Any advice you could give me, would be super appreciated! Thanks! Reply
This will be my first year attending any conferences. I think the first I ever heard about conferences was just from blogging friends (through emails, leaving comments, on FB, etc). But a lot of the time, the ad company you use will let you know about conferences. Like BlogHer. They run my ads, and they are also putting on a really big food blogger conference! Just keep your eyes open in the coming year and you will find out plenty! Also, my friend Dorothy from Crazy For Crust and I will be hosting our second online blog conference in the fall. It’s a good option for newbie bloggers as it requires no travel, no real time commitment, and plenty of networking and advice! I’ll be sure to blog all about it as we get closer, so just keep checking in ๐ Reply

I didn’t make any resolutions either!! I have a hard enough time losing the baby weight (if your kid is almost a year and a half, does it still count as baby weight??) without feeling like a resolution failure. Thanks for this recipe! I can’t wait to try it! Reply

It sounds wonderful, but I don’t understand how it can be only one point when the milk alone is two points. plus the pudding. Am I missing something? Reply
The milk is only one point if you use the light almond milk. And the amount of pudding is scant enough that it registers at 0 points! Now, if you started having multiple servings, you’d have to start adding the pudding points. Reply
