We’re crazy packing and getting ready to move next week, but I’ve been day dreaming about the pool waiting for us at our new apartment building. I grew up spending my summer days by the pool or at the beach, and I’m really excited to get back to that kind of a summer lifestyle (we don’t do a whole lot of pool-lounging here in the southern VA mountains, unfortunately)! Since Memorial Day is on Monday, I thought it would be fun to share a few summertime mocktails (non-alcoholic) this week that would be delicious to drink poolside or at the beach. This one tastes like summer in a glass and is so easy to make! It’s full of strawberries and pineapple, which make it fruity and tart. It also calls for ice cream, which means it’s cream and dreamy too! All of the drink recipes I’ll be sharing are for serving to a crowd, but I think you could easily pare them down to just a serving or two. Cheers! Clarification: despite the picture, there are actually no oranges in this recipe. This is simply a styling error. I liked the summer-time feel of the oranges in the shot, but in the chaos of shooting three drinks in one day (2 of which DO have oranges in the recipe), I failed to realize that this particular drink does not include oranges. Continue to Content Strawberry Pineapple Shaker-Upper {non-alcoholic summer drink} Yield: 6 tall glasses Print Ingredients 10 ounces frozen strawberries 20 ounces crushed pineapple strawberry sherbet (1 pint) vanilla ice cream (1 pint) Club soda Instructions Place half of the strawberries, pineapple, sherbet, and ice cream in a blender and blend for 1 minute or until smooth.Repeat with the remaining half. Stir the two batches together in a large bowl. Serve by filling a glass 2/3 full with the mixture, and then slowly add club soda to the top. Give it a small stir with the straw before sipping.Optional: garnish with a pineapple chunk.
