This recipe is actually an oldie from the last time I did 3 Weeks of Girl Scouts (in 2012) that I’ve decided deserves a makeover and a new chance at the spotlight.

These bars were my very, very, very, very, very favorite recipe I posted from that GS Cookie series. I mean, they are just knock your socks off delicious. And when I posted them (the first time), I just knew people would go nuts over them. Like, really, really nuts. Because they are just that good.

So I posted them and waited for the applause that I knew would bring down the house.

And I waited.

And waited.

And waited some more.

And all I ever heard was crickets. Nobody ever noticed this recipe!!!!

Which is really just a crying shame, because they are simply divine. The sweetened condensed milk tones down the mint a little bit, so that it’s not overwhelming. The cookies absorb the sweet stickiness perfectly, creating the signature chewy texture we’ve all come to love in a magic cookie bar. And the layer of white chocolate and semi-sweet chocolate create a nearly fudge-like layer in the middle of everything, putting these bars right over the edge.

I thought this was one recipe that definitely deserved a second chance to be noticed!! So pin it, print it, send it to your email– whatever you’ve gotta do to hang on to this one. It’s a keeper!

Thin Mint Substitution

Thin Mint Magic Cookie Bars

Ingredients

  • 1 package (2 sleeves) of Thin Mints (or Keebler Grasshopper Fudge Mint Cookies)
  • 1 c. White Chocolate Chips
  • 6 tbsp. Butter or Margarine, melted
  • 3/4 – 14 oz. can Sweetened Condensed Milk

Instructions

  1. Line 9×9 baking dish with foil or parchment paper.
  2. Pour in melted butter.
  3. Crush one sleeve of thin mints (should be about 1 cup). Pour crumbs into the baking dish and press firmly and evenly into the butter, until smooth.
  4. Spread white chocolate chips over the crumbs, and pour 3/4 of the can of Sweetened condensed milk over top (the sweetened condensed milk should cover the top of the chocolate chips, but they shouldn’t be swimming in it).
  5. Break up the remaining thin mints into small chunks. Pour over the sweetened condensed milk and press in.
  6. Bake at 350º for 25-30 minutes.
  7. Let cool completely before cutting and serving.

  2. I just wanted to let you know that I LOVED your original recipe for these! I used it last year for a box of left over Thin Mints and loved it soooo much that this year I had to search the internet for it. I hope you don’t mind that I used the original version instead of the re-do (which I am sure is also fabulous)!

    I just wanted to let you know that I saw it! And I loved it! And you are right, it is the best thing to ever happen to Girl Scout Cookies
