This Baked Brie Apple Pie is the perfect marriage of a sweet Baked Brie and Cheddar Cheese Apple Pie… but without the cheddar! If you’ve never tried a little cheese in your dessert, it’s time to dive in.

Ok. So this is not a Skinny Saturday post. Clearly. But I thought I’d tell you about tonight’s run anyway. Just for kicks and giggles.

So I want to lose about 2 lbs by Friday. I don’t care if it’s just water weight and a really good fluctuation, and I’m back up on Saturday. I just want that scale to show 2-dang-lbs less on Friday morning than it showed me today. And I really don’t think that’s too much to ask. I really don’t.

Anyway. In an effort to make that happen, I decided to start running again today. I decided not to care that my left foot hurts. Or that my right ankle hurts. Or that it’s still just barely chilly enough that I wheeze afterwards. Or that I can hear my knee crunch (gross, right?). Or that all of my spandex-y running clothing (which was loose on me last summer) relentlessly clings to my muffin top. I just don’t care anymore!!!

I’m so ready to feel skinny again that I can taste it (and it tastes like Baked Brie… but we’ll get there in a moment).

But I do feel sort of bad for all of the innocent bystanders who have to witness my fat-girl-running-phase. I mean, I know it’ll pass. I’ve been through it before. But even though it’s a little funny to hear about, it’s really not something you want to actually see with your own eyeballs.

Especially because it turns out I’m the world’s worst running clothes shopper. I bought a pair of yoga pants a few weeks ago. I tried them on when I got home, and they passed the easily-fit-over-my-muffin-top test just fine, so I went ahead and tore the tags off. What I failed to notice at the time, is that they are in fact bell bottom yoga pants. And a little too short at that.

So. I’m running. wheezing. and limping.

And my bell bottom yoga pants were flapping in the wind.

It was surely a visual treat for every car that drove by.

Regardless… I’m a runner again. And it feels really good for right now (even though my foot might disagree with me in the morning).

And to my dear local friends… you may want to avert your eyes for a month or two. And don’t judge me for running in bell bottoms. It’ll likely happen again.

 

Ok. So we need to balance out all this running/calorie burning/skinny/nonsensical talk with a mama-jama-hella good pie.

Ohhhhhhhhhh, this pie is so good. I am really into Brie right now (here and here), and this pie is like Baked Brie on a mission gone rogue.

If you eat cheddar on your apple pie, you already have an inkling of how yummy this dessert is. And if you’re a baked brie fan, you’re probably feeling pretty good about this too. But for those of you who have never combined cheese and sugar… this is it, folks! Because this pie is the ultimate cheese-can-be-a-dessert gateway recipe.

Just trust me. You are going to love it. I promise.

Baked Brie Apple Pie

Ingredients

  • 2 unbaked pie crusts (fact: I use store bought)
  • 8 oz. brie cheese, cubed (I suggest leaving the rind on)
  • 6 medium granny smith apples, peeled and diced
  • 2 tablespoons butter
  • 1 1/4 cup brown sugar
  • 1 Tbsp. ground cinnamon
  • 1 Tbsp. ground nutmeg
  • 3 Tbsp. flour
  • optional: 1/4 cup chopped pecans
  • 1 egg, beaten
  • 3 tbsp. cinnamon sugar (3 tbsp sugar + 1 tsp cinnamon)

Instructions

  1. Preheat oven to 450.
  2. Place one unbaked pie crust in an ungreased pie plate (you could probably fit another apple or two in there if you have a deeper pie plate on hand, and no need to adjust the other ingredients).
  3. Spread the brie "cubes" evenly over the pie crust. Set aside.
  4. In a gallon sized zip top bag, add the brown sugar, cinnamon, nutmeg, and flour. Seal and shake until well mixed. Add the apple cubes, and shake again until apples are thoroughly coated.
  5. Pour the coated apple cubes into the pie crust and spread evenly over top of the brie. Sprinkle pecans on top of the apples if desired (I highly recommend pecans!).
  6. Cut the butter into small bits, and "sprinkle" them over top of the apples.
  7. Place the second pie crust over top and seal the two crusts together (I rub a little water around the edges and use a fork to crimp).
  8. Brush egg over top of the pie crust and sprinkle with cinnamon sugar.
  9. Bake for 45 minutes, let cool for 20 before slicing.

I remember the first time someone asked me for a slice of cheddar cheese with the apple pie I was serving- I can even remember the guys face and table # because I was so weirded out!! But now that I am more knowledgeable in this foodie world I can only imagine what baked brie apple pie is like!! DROOL! And I always end up with bell bottom yoga pants- WTH!! I feel like I look so funny.

Also – you are SO cute – even though we have not met – you always look gorge on the computer:) finally, I run in the privacy of my home so as not to scare the passerbys – my running clothes are NOT pretty at all – and I also have bell-bottom yoga pants

  3. I just got rid of my bell bottom yoga pants… No, like last week. It made me so sad, but it made my husband so happy, ha!
    I’d go run a marathon right now if it meant this pie would be waiting for me at the finish line.

  4. This sounds incredible! I love pairing cheddar and apples, but have never even thought of using any other kind of cheese. Brie is one of my favorite cheeses (right up there with goat cheese), so I’m dying to try this out. Such a fun, creative idea!!

  5. Skinny girls are overrated. Unless it’s health related, don’t stress what you’re stressing. I say hang up the bell bottom yoga pants (literally, nail them to the wall.. they sound hilarious) and just focus on making more amazing pies like this one.

    Seriously.. Baked brie inside of an apple pie?! That sounds like one of the most amazing things I’ve ever heard! Thanks for sharing!

Duuuuude, the same thing happened to me except instead of flared yoga pants, I assumed a pair of yoga shorts would be satisfactory enough without trying them on… and when I actually did and wore them to the gym (where there is an insanely cute Ryan Gosling lookalike that I spy on), I was horrified to find out it gave me a CT (camel.. you know). Sooooo needless to say, I will not be wearing my sexy yoga shorts to the gym anytime soon. And ew, my knees crunch too! What does that mean? It’s driving me NUTS.

    Anyyyywaaaay, I LOVE brie and I LOVE apple pie, so combining the two sounds like heaven. Want!

  7. The fact that you use prepared crust is wonderful! I am not a beautiful pie crust baker. Maybe, I can actually duplicate that gorgeous perfectly browned, cinnamon sugar covered pie of yours! The creaminess of brie can only be amazing with apple pie. Thank you.

  8. too funny about the yoga pants. Same thing happened to me when I bought mine at victoria secret…they fit the muffin top, but flared and I could totally see myself tripping (in the house…they don’t see a day of yoga). So, I got my sewing machine out and tapered them in…perfect! (The flare made my thighs look bigger than they are! Or something wasn’t looking right!)
    Loving this apple pie with the brie…going straight to my muffin top– but who cares, YUM!

  9. I love cheddar cheese and apple pie. And I love Brie. I saw the title and I was in love before the picture loaded on my screen. I always feel like people are making fun of me when I’m running (and I use the term “running” loosely). Then I think of Pheobe on Friends and realize I can’t be that ridiculous.

  11. This looks delicious. I can’t wait to make it to take to a July 4 cookout. It looks just as wonderful, but less involved than the pear gruyere pie that became my obsession this past winter. I have a longer-standing obsession with brie, but haven’t baked with it before (it usually doesn’t last long enough in my house to even consider baking).
    Quick question though: I see butter on the ingredients list but not in the instructions. What do I do with the butter? Is it a mistake?

    • Oh, so sorry! I’ll fix that now. You’re supposed to “sprinkle” little bits of butter over the top of the apples before covering them with the second pie crust ๐Ÿ™‚

  12. my pie started to get slightly burnt too =(… I think ill try it at 375 next time I had to take it out with 11 minutes still on the timer. However other than the browning it looks very good and I’m VERY excited to try it!!

  13. this looks amazing! i have a ton of apples from our apple trees so i will try this pie. quick question, do you think i could prepare the apple pie stuff in the bag and freeze it to bake at a later time? that way i can utilize all my apples without them going bad? just curious if you’ve ever tried that. thanks!

  14. I can’t wait to make this as a cheat meal after I compete in a bodybuilding show. I was wondering if you’ve ever made this and frozen it prior to baking? Does the flavor or texture change at all? I’m thinking of making it ahead of time so that it’s ready to just throw in the oven when I’m ready and able to eat. Thanks.

    • I’ve never frozen it, and I’m not totally sure how it would do! Honestly, it doesn’t take too much effort to throw together, so maybe just stick with that? Either way, enjoy! ๐Ÿ™‚ And good luck in your show!
