Prepare to loaf pans lined with parchment and lightly sprayed with nonstick cooking spray. Mash the bananas with a fork until mostly smooth. Mix in the egg, sugar, vanilla, and oil. Mix well. In a separate bowl, mix together the flour, baking powder, baking soda, cinnamon, and salt. Fold the dry ingredients into the wet until batter forms. Pour batter into the two prepared loaf pans.
