Two of my favorite chocolate chip cookies sandwiched together with and eggless brownie batter filling. It’s the best of both worlds! If people could have cookie soul mates, this one would be mine. Which is fitting, since it’s actually two cookies sandwiched together. With a brownie filling. Because obviously my cookie soulmate would need to have multiple personalities. Today’s recipe is a dear old friend from waaaaaaay back in my archives. As so many of my posts are these days, I hope you don’t mind. I’m having so much fun digging back through my first posts and tuning up the recipes, re-shooting the photos, and cleaning up my blog. For kicks, here’s what my photo for this recipe used to look like: Styling issues aside (????), this recipe was fraught with problems. For one: I used margarine to bake those cookies. Ohemgee. I KNOW. You see how there are no crispy, golden edges? And the tops didn’t bake into a beautiful, golden brown? That’s because there’s no butter in there. Old me didn’t mind. Learned-how-to-bake me minds a lot. So, out with the margarine cookies and in with the butter! And I think I speak for all of us when I say, phew!
