Click the links above to see all of our fun ice cream recipes from this week. One of my very favorite memories from college is the smell of nail polish remover and waffle cones. A nail salon and a Coldstone Creamery stood side by side at my favorite entrance to the mall. I don’t know why, but there’s something magical about walking into a mall– especially when you’re a teenager with no major, life-burdening financial responsibilities. The mall is so liberating, beckoning to you with all of it’s shining, glittering new things. Something about it makes you feel like time stands still, and things are pretty and smell good, and you’re surrounded by nothing but possibilities. Beautiful, perfume-y possibilities. And so I love that smell. It reminds me of a grand time in my life when I spent every penny I earned on new clothes and pedicures. Don’t ask me how I ever managed to pay rent… it’s a total mystery to me to this day. Thanks the nostalgia I associate with that particular mall entrance, Coldstone has a particularly soft spot in my heart. But apparently, my husband doesn’t share the sentiment. Which baffles me. I seriously can’t wrap my brain around loving a man who doesn’t like Coldstone. But….. I do. So that’s that. And after a long and hard-fought battle, I’ve had to resign myself to other ice-cream eateries. Which is all well and good, seeing as how I love ice cream in it’s many forms. And seeing as how I can easily make my favorite Coldstone flavor combo at home anyway. Really, the most difficult part about making “slab-like” ice cream at home is creating a workspace that doesn’t involve letting ice cream melt all over the counter tops. And finding suitable… scrapers. Is that what they’re called? Those thing-ys they use to scrape the ice cream and smush in the toppings? Anyway. Problem solved. I used my Silpat to create a non-stick workspace for scraping and smushing. And using wooden spatulas worked like a dream. Once I had that part figured out, the rest was gravy! Grab your favorite vanilla ice cream and add brownies, pecans, caramel sauce, and hot fudge. Smush it all together for a delicious copycat version of Coldstone’s Founder’s Favorite. So easy and the perfect way to impress your kiddos this summer. Continue to Content Coldstone Founder’s Favorite Copycat Yield: 1 serving Print Ingredients 1 cup vanilla ice cream 1 brownie* 1 tbsp hot fudge sauce 1 tbsp caramel sundae sauce 1 tbsp pecan halves, chopped Optional: waffle cone bowl Instructions Place ice cream on a silicone mat or cutting board (something non-slip). Use two wooden spatulas to "smush" the ice cream. This softens it a little (without melting it) and prepares it for toppings. Add the brownie, hot fudge sauce, caramel sauce, and pecans. Use the spatulas to mix the toppings into the ice cream. Scrape the ice cream mixture into the serving bowl and enjoy immediately! Notes *I used a homemade brownie, but feel free to buy store bought instead! You could even buy the pre-packaged brownie bites if you're only making one serving. Entenmann's is my favorite brand. Just…OMG. And I know your pain. My husband doesn’t eat anything sweet really ever, and I always wonder…why do I love him? 😉 Reply
