The holidays are upon us and all of the crazy fun that comes with them! I come from a long line of cookie bakers, and Christmas cookies are a treat I look forward to all year long.

One of the best ways to get your fill of delicious cookies is to host a cookie exchange! It’s a great opportunity to bake up your favorite cookie recipes and share the holiday spirit with your friends.

Obviously, nothing goes quite so well with cookies like an ice cold glass of milk! At the cookie exchange, it is a great idea to label each plate that comes through the door with the baker’s name and the name of the cookie. This way, everyone knows exactly what’s in each cookie and who to praise for their deliciousness!

Peppermint Bark is one of my favorite seasonal treats, and adding it to my favorite dark chocolate pudding cookie is simply heaven. Follow this recipe (and be sure to use Real California Butter) for the peppermint chocolate cookie of your dreams 🙂

Peppermint Bark Pudding Cookies

Ingredients

  • 1 cup Real California butter, cold
  • 3/4 cup brown sugar
  • 3/4 cup sugar
  • 2 eggs
  • 2 tsp vanilla
  • 1 tsp sea salt
  • 1 tsp baking soda
  • 1 Tbsp hot water
  • 2 1/4 cups all purpose flour
  • 1/4 cup dark cocoa Powder
  • 3.75 oz chocolate pudding mix
  • 1 cup peppermint bark, chopped into bits
  • 1 cup dark chocolate chips

Instructions

  1. Preheat oven to 350 degrees F.
  2. Using a stand mixer, beat the Real California butter until smooth.
  3. Add the brown sugar and sugar. Beat for 1-2 minutes, until nearly creamy.
  4. Add the eggs, one at a time and mixing in between additions.
  5. Dissolve the baking soda in the tablespoon of water. Add both the baking soda and the vanilla to the mixer and mix well. Mix in the salt.
  6. Add the flour, cocoa powder, and pudding mix, and mix until dough forms.
  7. Mix in the peppermint bark bits and chocolate chips using a wooden spoon or spatula.
  8. Scoop dough by heaping tablespoons onto a parchment lined or silicon lined baking sheet, 2 inches apart.
  9. Bake for 10-12 minutes until edges are set. Let cool on the baking sheet for a few minutes before removing to wire rack to cool completely.
