I just heard the voices in my head say, “Adore is a fancy word for really like!” Did anyone else hear that?) But seriously. I really do adore S’mores, and I like to squeeze grahams, chocolate, and marshmallows into just about every season I can! Pumpkin, conveniently enough, pairs fabulously with S’mores, and these parfaits are so yummy. And they’re really pretty easy to make! You do have to bake a cake. So that does take a little bit of time. But it’s a quick, two-ingredient cake. And, really, that’s not so bad! If you take a few minutes to throw the cake in the oven in the morning (or even as late as the afternoon!), you can whip up this really gorgeous and simple seasonal dessert for dinner guests in no time at all! Continue to Content Pumpkin Sโmores Parfaits Yield: 4 servings Print Ingredients 18 oz yellow or spice cake mix 15 oz can pumpkin puree or pure pumpkin (NOT PUMPKIN PIE FILLING) optional: 1 teaspoon pumpkin pie spice 1 recipe simple chocolate mousse 1/2 cup marshmallow bits 4 chocolate covered graham crackers 1/4 cup + more for drizzling chocolate sauce or {chocolate syrup|https://somethingswanky.com/homemade-chocolate-syrup/] Instructions Preheat oven to 350°F. In a large bowl, mix together the cake mix, the pumpkin puree, and (if desired) the pumpkin pie spice until a batter forms. Scrape the batter into a greased 8x8 or 9x9 baking dish, and bake for 35-45 minutes until a toothpick inserted comes out clean. Let cool completely. Divide into 8 pieces. In four 8-ounce serving glasses/dishes/whatever you want to use: layer the pumpkin cake (crumbled), the chocolate mousse, the marshmallow bits, and the chocolate sauce. Layers in one dish should measure: 1/8 of the pumpkin cake, approximately 1/4 cup chocolate mousse, 1 tablespoon marshmallow bits, 1 tablespoon chocolate sauce, 1/8 pumpkin cake, approximately 1/4 cup chocolate mousse, 1 tablespoon marshmallow bits, chocolate syauce drizzle, 1 chocolate covered graham cracker on top. Chill until ready to serve. Notes I like to put the chocolate mousse in a zip top bag, and snip a corner to pipe the mousse into the glass instead of trying to spoon it. Don’t miss a bite!
