I am more than mildly obsessed with banana bread and believe it should be made in every flavor. And, 2. Peanut butter + butterscotch + chocolate is like a million times better than just peanut butter OR butterscotch OR chocolate. Again, more than mildly obsessed here. Which is why this banana bread needed to happen. I took my favorite classic chocolate chip banana bread recipe and added a package of butterscotch pudding mix to the batter. After it baked, I tweaked my fave ganache using butterscotch chips and peanut butter to top the bread. It’s soft and rich and completely sinful. But at the same time… it’s pretty full of bananas… so there’s that. Maybe it’s really more of a health food? I guess I’ll let you be the judge ๐ Continue to Content Scotcheroo Banana Bread Print Ingredients 1 1/2 cups All Purpose flour 1 1/4 tsp baking powder 1/2 tsp. baking soda 1/2 tsp ground cinnamon 1/8 tsp salt 2 slightly beaten egg whites 4 medium, overripe bananas 3/4 c. sugar 1 teaspoon vanilla 1/4 c. vegetable oil 3.4 ounces butterscotch pudding mix (dry) 1 c. semi sweet chocolate chips For the ganache: 2 cups butterscotch chips 3/4 cup creamy peanut butter Instructions For the bread: Preheat oven to 350 degrees F. Mash the bananas (I usually beat mine in my stand mixer using the paddle attachment) until mostly smooth. Mix in the egg whites, sugar, vanilla, pudding mix, and oil, mix well. Add the flour, baking powder, baking soda, cinnamon, and salt. Only mix until the batter forms. Fold in the chocolate chips using a rubber spatula. Pour batter into a greased and parchment lined loaf pan. A standard loaf pan will need to bake for about 45 minutes. Baking time will vary depending on the size of the loaf pan. A toothpick should come out clean before the removing the bread from the oven. Let cool for 10-20 minutes before removing from the pan. For the ganache: Over low heat in a medium sauce pan, mix together the butterscotch chips and peanut butter until smooth and melted. Spread over the banana bread and let cool to set. I love banana bread SO much. It’s the best thing ever. I never get sick of it! And yes, PB + Butterscotch is an amazing combo. In my cookbook I have these PB + butterscotch cookies that are some of my alltime faves and I also make a homemade PB with melted butterscotch chips in it. So good! Pinned your bread! Reply

I am so going to make this next time I get ripe bananas. Just an FYI.. The ingredient list for the glaze at the bottom lists 2 cups butterscotch ganache as an ingredient when I think you meant 2 cups butterscotch chips. Reply
