Recipe Tips & Notes

  • Crush the graham crackers into a fine crumb so that they incorporate evenly throughout the dough.
  • Try adding different mix-ins to the cookies instead of the chocolate chips– like M&Ms, peanut butter chips, or sprinkles!
  • Try spreading peanut butter on one of the cookies and marshmallow cream on the other for a Fluffer Nutter Smookie!

  1. Oh my. These sound SO dang good!! I love things with marshmallows. And, I LOVE things with cream cheese. Can it get any better!?! I think NOT!! These are going on my to make list right now. Tonight I made some S’mores Rice Krispy Treats to go up on my blog tomorrow! We’re on the same wavelength 😉 I hope you watch out for them, they’re delicious!

  2. Would love to make these. One question, when do you mix in the cake mix? I have re-read and re-read the recipe and don’t see anything about that.
    Thanks so much, Jackie

  3. These look sooooo chewy and delicious! What a great way to make a s’more that can be packed in a lunch. 🙂 Gooey Butter cake started in St. Louis. Urban legend has it that it was a bakery mistake when someone put too much butter in a cake batter. The rest is history. 🙂 Thank goodness for delicious mistakes! And for gooey butter cake cookies!
