I know the pictures are a little crazy (blinding much? 4 years, and I’m still learning my camera. Yeesh)! And I know they kind of just look… well… lumpy. And I’m trying to tell you that this lumpy dried fruit is, like, the best dessert ever. So yeah. I know I’ve got my work cut out for me tonight. But I’m not worried. Want to know why? Because these are way more than dates. Like, let’s talk butter. And sugar. Rice Krispies and pecans! These are SO much more than dates. My Grandma usually pulls these out around the holidays, so I wanted to be sure to post these before Easter. They are soft and chewy, crispy and crunchy, and just perfectly sweet! I think they are perfect for the Easter dessert table, and you’re family is going to love them! These come together SO easily and are ready in no time at all. Products I used in the making… Continue to Content Date Balls Print Ingredients 1/2 cup butter 8 ounces dates 1 cup sugar 1 cup pecans, chopped 2 cups rice krispies 2 tsp vanilla powdered sugar for rolling Instructions Use a small food processor (or even just your knife 🙂 and give the dates a good chopping.* Add the chopped dates, butter, and sugar to a medium saucepan over medium high heat. Once the butter has melted and the sugar has dissolved, the dates will come together and form a sort of "blob." Remove from heat and transfer to a large mixing bowl. Add the krispies cereal, vanilla, and chopped pecans. Mix well together. Once mixture is cool enough to handle, scoop out heaping rounded tablespoons and roll into balls. Roll each ball in the powdered sugar. Serve immediately or store in an airtight container for up to a week. Notes *I prefer to use a small food processor here, because I really like the pieces of dates to be a small as possible. But this is a personal preference and you can certainly chop them by hand-- keep the pieces small, but it's not necessary for them to be nearly "shredded" as they would be in a food processor. I used to make date quick bread growing up and just loved it. The recipe was in the Betty Crocker COOKBOOK WHICH I GREW UP WITH AND STILL USE. THE BREAD WAS DELICIOUS! I EAT DATES NOW IN MY CEREAL AND THEY SWEETEN IT WITHOUT USING ANY OTHER SUGAR AS THE DATES ARE SO SWEET. IS THERE ANY WAY THAT THAT SUGAR IN THIS RECIPE CAN BE DELETED? ALSO, COULD COCONUT BE USED TO ROLL THE COOKIES IN ESPECIALLY FOR EASTER? Reply

Without looking at the recipe I think this is what I used t make forming then in the shape of a strawberry and rolling them in red sugar to look like a strawberry. Green leaves were piped on top fro frosting. They were very good and cute. These look good to me. Reply

My mom used to make these cookies for Christmas but she called them Angel Wing Cookies and they were rolled in angel flake coconut. I still make them and love them! Reply
