The red color originally came from using non-dutched cocoa in baking. Red Velvet cake and Devil’s food cake originated around the same time and were both intended to be “extra fancy” desserts for the well-to-do in the Victorian era. The only difference between the two recipes at the time was that Devil’s Food Cake recipes called for chocolate and Red Velvet Cake recipes called for cocoa. During World War II food rations, many bakers used beetroot juice to color their cakes. Some bakers still prefer to use it, claiming the unusual ingredients makes the cake more moist. Red Velvet Cake is widely considered a Southern food, although the Waldorf-Astoria in New York is famous for theirs. Cake Man Raven opened one of the first bakeries devoted to Red Velvet Cake.
