How to Quickly Ripen Bananas – FAQ Why should I use ripe bananas? When you’re eating a banana, straight from the peel, it’s a matter of personal preference. My husband likes to eat them green, and I like them speckled but still firm. However, baking with bananas is a different matter. Overripe bananas are easier to mash and will mix into your batter more smoothly. Overripe bananas are also much sweeter, which makes a difference in the taste of your baked goods. Can you bake with unripened bananas? In my experience, you technically can. But it’s just not the same. The bread isn’t as moist, and the flavor definitely isn’t as sweet. And– as someone who doesn’t love the taste of underripe bananas anyway, I feel like anything baked with underripe bananas tastes funny. So, in a nutshell– yes, you can. But don’t. How ripe should bananas be for baking? I think bananas are at their very best for baking when they are covered with large brown spots and the stems are brown. But you might be surprised just how brown (or black!) a banana can get before it’s truly no good anymore. As long as the banana doesn’t have actual mold growing on it, it’s ok to use! Roasting Bananas How do you ripen bananas quickly? You can slow roast bananas in the oven until they are ripe enough to use in a recipe (it only takes about 30 minutes). And once they’ve cooled, you can also freeze them for smoothies (because smoothies are better with ripe bananas!). Simply bake bananas in an even layer on a baking sheet at 300ºF for 25-30 minutes. They should be black and feel soft. Let them cool completely before use, and that’s it! I don’t recommend attempting this with completely green, unripe bananas. They won’t have developed enough sugars and flavor be useful in baked goods, even after baking. Such a great trick! You know I’ve done this ages ago but haven’t resorted to it recently but it totally works. Thanks for the reminder – pinned!
Now for those pesky fruit flies do this. Put some vinegar in a very small jar. Then add some dish-washing liquid. That is it. When jar looks bad with flies pour out and do again This works every time.
Wow. What a great tip! I never knew. They do look kinda creepy. Like Halloween-themed bananas! I love it!
Super excited! I had never heard this tip before – pinned it so I won’t forget. Now to decide what to bake…. 😉
Ah this is SO useful, bananas never sit long enough in my house to ripen for baking. This is great to know, thank you!
This tip came at the perfect time. I just bought bananas yesterday for banana bread and was hoping they would hurry up and ripen. 🙂
Will this work with completely green bananas? I bought them 4 days ago and they show no sign of ripening
I actually don’t know! Mine were yellow/slightly green (no good for baking!), but I’m not sure how they would taste going from VERY green. If you try it, let me know!
Thanks for responding. No it did not work.. Even leaving in oven longer and still were hard as a rock. Actually, after having bought them one week ago, I threw the last 3 in the trash this morning…still green. Even tried the brown bag to speed up ripening. Stubborn bananas!! lol.
